The Coconut: Towards a More Holistic Cardiovascular Assessment

Abstract

The coconut is a basic ingredient of numerous dishes which are consumed by over 1 billion people living in the tropics. Mature coconut meat (12 mo. old) contains about 35% coconut oil. Early studies of traditional populations who consumed a coconut diet showed favorable health indicators. Consumption of virgin coconut oil (VCO), one of the products from coconut meat, is not recommended by the American Heart Association due to its high saturated fat content. However, the evidence against saturated fat applies mainly to animal-derived fat, which are long-chain saturated fatty acids, mainly palmitic acid (C16) and stearic acid (C18). In contrast, coconut oil is predominantly made up of medium-chain fatty acids, mainly lauric acid (C12). Nevertheless, coconut oil is often included in the saturated fat warning. Furthermore, there is no scientific study that links consumption of coconut oil with heart disease and many studies on saturated fat done before the 2000s may have been tainted with trans-fat. Recently, the 2025 Dietary Guidelines for Americans reiterated the recommendation to keep saturated fat at below 10%, without acknowledging the differences between medium-chain saturated fats and long-chain saturated fats. This talk shall present the scientific evidence on the coconut diet and VCO related to cardiovascular health. Given the wide-spread consumption of the coconut diet and the rising popularity of VCO, a more holistic assessment of their impact on cardiovascular health is needed.


Biography

Fabian M. Dayrit obtained his BS Chemistry degree from the Ateneo de Manila University, Philippines in 1975, MA and PhD Chemistry degrees from Princeton University in 1978 and 1981. In 2000, he started doing research on virgin coconut oil (VCO). During the COVID-19 pandemic, he participated in two clinical studies that successfully showed that VCO is able to provide protection in mild cases of COVID-19. He is an Academician of the National Academy of Science and Technology Philippines. He is chair of the Scientific Advisory Committee on Health of the International Coconut Community (ICC).
